Well we finally passed all of our inspections last week and we are roasting and brewing coffee downtown now! We are having a soft opening this week and should open formally next week. Please stop by!

We are nearing the end of our buildout and just can not wait to open! Have to pass some inspections and then we will be on our way soon.

Floor tile going in at the roastery today. Love the layout!
Vent
Vent through the roof is in! Getting a lot closer this week with our buildout. Soon this will be taking that great roasting smell up and out to downtown.
Event Coffee Brewing
We had our first coffee brewing "event" at Rolling Meadows Brewery recently and it was a great success. We featured grind, brew, and service of two single origin coffees while being able to interact with patrons at a personal level, we loved it!
Brew bar and triple pour stand
Along with the shop, we are under way with our brew bar and service counter. Check out the top of our new triple pourover brew stand being created by 3cord Creations!

We have initial progress on removing the killer 70's wood paneling walls and drop ceiling, already looks better...
We have a space!
Even though we just started roasting coffee for sale in January, we have had our eye on developing our own microroastery since day one. We have always been in love with the idea of roasting coffee downtown and now it seems as though our dream is becoming a reality!
We signed our lease June 12, 2014 with a start date of July 1, 2014 on a small retail property at 321 East Monroe, Springfield, IL 62701. With a little love, drywall, and a new Diedrich roaster, we will be live roasting coffee downtown by the end of September 2014!
